Chocolate Making Equipment - Horizontal Chocolate Holding Tanks
McCarter vessels are designed & built by WM. A. Schmidt and Sons under
the jurisdiction of ASME guidelines using medium gauge materials &
welded-reinforced construction.
WAS offers both horizontal and vertical chocolate holding tanks. These chocolate holding tanks
are a crucial step between conching or tempering and the final step of molding the chocolate
for transport.
The liquid chocolate needs to be stored after it leaves the conches.
It is kept in tanks at a constant temperature and is stirred regularly to
prevent fats separating from solids. For longer periods, the chocolate may
be stored as blocks.
Standard unit material is carbon steel ASTM A36.
Optional materials are stainless steel, ASTM A240-304/316
